III Congress of Kitchens and Volcanic Ecosystems. Lanzarote, of the 12 al 14 from December.

It works perfectly and we want to continue growing and defending all this unique volcanic culture that exists in Lanzarote and in all Canary Islands.

P. One of the pillars on which the Congress is sustainability

R. I think there is a very clear example of sustainability. And this is how man has adapted to these territories.. We think about Canary Islands, but volcanoes are all over the world. They are very different cultural realities and ways of life., but in all cases the human beings who live there have been able to perfectly understand how to survive alongside those unique conditions that, in some periods of history, have been extreme.
