“I recently tried the tasting menu at the Taste restaurant 1973 (Hotel Villa Cortes, Aaron) where the head chef Diego Laureano Schattenhofer exhibits an irrefutable culinary brilliance between renewed proposals and the already iconic ones he revised. Terroirs and gastronomic symbols of the Canary Islands that the chef has worked hard to show after trials and processes executed with millimetric precision. At the first change of the culinary sequence, the marine essence of the “Atlantic Prelude” captivates, espléndido ensamblaje de bocaditos que ya sirven de credencial a lo que vendrá posteriormente.”
