School of the Canary Islands Hotels (Hecansa) promoted this fish and local wine pairing workshop held at the Conatvs winery in Fuerteventura

A total of thirty-five people participated in the pairing workshop organized by School of the Canary Islands Hotels (Hecansa), public company attached to the Department of Tourism and Employment of the Government of the Canary Islands, in the bodega Conatvs, located in the municipality of The Olive, in Fuerteventura. The Minister of Tourism and Employment, Jessica de Leon, inaugurated this workshop that is financed with funds from the Next Generation EU program within the Cohesion Actions in Destination (ACD21), and which has the collaboration of the Canary Islands Wine Tourism Cluster.

“This type of workshops aim not only to position our local product and our wines, but offer, through training, that pairing with which to support our chefs and the professional sector of the Islands”, Jéssica de León explained, who also highlighted that “Ninety-five people have enrolled in the course held in Fuerteventura, the quota being thirty-five. This speaks of the great reception that these days are having”.

The person responsible for Tourism and Employment assured that “From the first minute we have understood the importance of positioning the Canary Islands destination as a wine tourism destination. The Canary Islands are largely unknown in the wine world., and if in the rest of the islands it is a heroic sector, It is almost a miracle that there are wineries like Conatvs in Fuerteventura”.

The CEO of Hecansa, Paola Plasencia, assured, for his part, what “The initiative reinforces Hecansa's commitment to continuous training and the creation of bridges between the educational sector, the business fabric and the territory”.

For the manager of the Canary Islands Wine Tourism Cluster, Hernan Tejera, this training allows “learn about the preparation of marine species that are not common in restaurants so that professionals can transfer, In turn, to customers, at the same time we provide them with appropriate pairings and give greater visibility to Canarian wines”.

This cycle of pairing experiences, which has already been held in Tenerife, Gran Canaria and Lanzarote, allows attendees to discover the flavors offered by the union of fish and wines from each of the islands with the aim of highlighting and exploring the marine and wine richness of each of the islands.

During the practical and training session that took place in the winery Conatvs, the chef Juan Carlos Clemente took a tour of the marine biodiversity of the islands and its culinary application, highlighting little-known local species through showcooking, in addition to inviting the analysis and tasting of Majorero wines and their pairing with preparations based on fish from the area..

During the pairing workshop, Chef Juan Carlos Clemente not only created different tapas based on local fish accompanied by Canarian wines., but also gave advice on handling and preserving fish, the performance of each species or the cleaning and handling treatment, among others.

These pairing experiences will take place next 10 February, to the La Peña viewpoint, In iron; he 24 February, to the Teneguía wineries, in La Palma, and in march, to the Niray wineries, In La Gomera.
