Monovarietal made with the most predominant grapes, the volcanic malvasia, It is in the words of Elisa Ludeña, winery winemaker, “a unique and special wine because it combines the purity of tradition with the commitment to sustainability and the natural environment of Lanzarote. “This wine is the perfect reflection of our philosophy of respect for the volcanic land and the constant search for authenticity in each bottle”.

Connection with the territory

The ancestral production method is a faithful reflection of the viticulture of La Geria, in which the work in the vineyard continues to be practiced as in the past. That is to say, minimal intervention in the field, as happens with the production of this wine, in which the only intervention is in the pressing of the grapes.

The resilience of a dryland vineyard that sprouts every year with exemplary quality, is equal to that end of fermentation in hostile conditions for the yeast, but that finally give rise to a fine bubble integrated in its middle. The Ecological Ancestral Tap 2024 provides vibrant freshness, in the same way that the picón brings freshness and life to the vines in the majestic holes of La Geria.

The vintage experience The Ecological Ancestral Tap 2024 starts with grape selection 100% organic volcanic malvasia, grown on a plot located in the northwest of Lanzarote with limited production. This unique enclave, influenced by Atlantic winds, guarantees moderate temperatures and protects the vines from heat stroke, thus favoring a balanced ripening of the bunch. In 2024 were only collected 2.700 kg of grapes, from there, among other reasons, its very special character.

Petnat, the most natural sparkling wines

Following the ancestral method, known in France as Pét-nat, The fermentation process takes place in two phases. The first in tank and the residual sugar is carefully controlled until reaching the 16 g/l, when the must is transferred to the bottle. In the second phase, yeasts complete the transformation of sugar into alcohol, naturally generating the carbon dioxide that gives rise to its delicate bubble and persists.

Precisely, Its complexity lies in the integration of its bubble, more similar to the finesse of a method sparkling wine champagne, than that of an ancestral and that gives it that delicacy in the mouth, that highlights the entire aromatic range of volcanic malvasia.

The result is an exceptional sparkling wine, with intense aromas, a fine and elegant bubble, and a refreshing acidity that invites you to enjoy it on any special occasion. Slightly cloudy in view, due to the sediments caused by this second fermentation in the bottle, you can see a rosary of bubbles, elegant and persistent. Its aromatic intensity is reminiscent of fresh fruits such as peach and apricot., as well as the characteristic aromas of fermentation, breadcrumbs and yeast.

Regarding the awards deserved, the vintage 2022 received the Gold Medal in the Gaia Wine Challenge as well as the same category in the Eco vino Awards. Regarding the vintage 2023, He deserved the bronze in Vinistra 2024 and the Grand Gold medal at Mondial des vin extremes.
