The Hotel Escuela Santa Cruz brings together the 1 October a specialty workshop and a menu that explores coffee as a gastronomic ingredient
Coffee will be the protagonist next 1 October at the Hotel Escuela Santa Cruz, but not only served in a cup. Coinciding with International Coffee Day, The center will host a day that will combine dissemination, tasting and cooking to explore the gastronomic possibilities of a product that is increasingly finding space as an ingredient.
Under the title 'The coffee: inside and outside the cup', The proposal proposes two ways to approach this universe: learn more about specialty coffee and then see how it can be incorporated into different culinary preparations. The event will take place at the Hotel Escuela Santa Cruz, in Tenerife.
The first part will come from the barista Jhon Fernando Ardila, that will be imparted among the 11:00 and the 13:00 hours an introductory workshop on specialty coffee. The session will address its main characteristics, the origin and journey of the grain from the plant to the roaster, in addition to including a practical part with tasting of different coffees.
The coffee, also as an ingredient
The second aspect of the day will take you directly to the kitchen. The team at Hotel Escuela Santa Brígida, led by your head chef, Carlos Bruno, has designed a menu in which coffee appears incorporated into savory and sweet dishes, thus moving away from its usual role as an after-dinner drink.
The tour will begin with a Espresso Martini as an aperitif. For the first course you can choose between a pear salad, goat cheese, walnuts and coffee vinaigrette, or a pumpkin cream, coffee and parmesan.
In the main, The options will be a hake loin accompanied by sautéed vegetables., cauliflower puree and white butter coffee and citrus, or a pork tenderloin with potato parmentier and coffee sauce. The closure, most recognizable within the recipe book associated with this product, it will be a tiramisu.
The menu will be priced at 25 euros and will be limited to twenty guests. For both the workshop and the menu - it is possible to participate in one or both activities - prior registration will be required through the email enabled by Hecansa.
The initiative is organized by School of the Canary Islands Hotels (Hecansa) and seeks to take advantage of International Coffee Day to show the different possibilities of a product that, beyond extraction methods, cup varieties and profiles, It can also function as an ingredient with its own personality within a gastronomic proposal..
