Romantic House redoubles its commitment to absolute sustainability in a 'closed circle'’ with two new vegetarian and one vegan tasting menus, elaborate 100% with the products of their farms, apart from the two usual menus with the new winter-spring dishes 2025.
Romantic House, the gastronomic project of Víctor Lugo and his chef, Aridani Alonso, in totally sustainable synergy with its well-known Finca La Laja and the rest of its fields, a total of 250.000 square meters of crops, presents the new season with many new features both in dishes and formats.
From today, the restaurant offers, in addition to its two usual tasting menus (short and long), two vegetarian menus, also in short and long versions, and a vegan menu.
Behind this decision lies the iron will of the owner and director of the restaurant, Victor Lugo, to stock up (and take advantage) almost entirely from their crop farms –café, vineyard with its own winery, vegetables, tubers, vegetables, exotic fruits…-, thanks to which he has been able, next to the chef, Aridani Alonso, create three all-vegetable menus.
Always working their farms and their kitchen from strict seasonality, Dishes such as the traditional version stand out on the new menu. Canarian salad’, very popular in guachinches and in family cuisine, from a pro watercress panna cotta with cheese foam, tomato sponge cake, pickled red onion petals, watercress sprouts and olive oil spheres.
Also, the Roasted eggplant with fennel and ginger emulsion, pickled fennel and coriander sprouts. Or the Green banana patacón with avocado tartare and passion fruit vegetable leche de tigre.
