The most gastronomic segment of the Venture Group, known as Venture Collections, incorporates Bartered – Seasonal Spanish Cuisine, your new restaurant based on three fundamental pillars: dishes created following traditional Spanish recipes, honest and careful monitoring of the seasonality of each product that makes up their dishes and an especially close look at local and seasonal products.

Located on the exclusive coast of The Caleta of Adeje, Bartered offers a unique and contemporary culinary experience that perfectly combines the rich Spanish culinary tradition with a touch of innovation and modern minimal interior design in its dining room.. Bartered highlights, among his extensive daily menu, a small menu of seasonal suggestions that constantly evolves and changes to take advantage of the best regional products with special emphasis on fresh Atlantic fish and seasonal vegetables, brought directly from several small farms with which they collaborate. Each dish reflects a sincere commitment, transparent and direct with tradition and great respect for temporality.

The gastronomic vision behind Troqué

Bartered – Seasonal Spanish Cuisine is part of Venture Collections, which includes two other excellent restaurants distinguished with Repsol soles such as Char – Fire and Embers or Kensei – Contemporary Japanese that is also part of the MICHELIN Guide selection in Tenerife. In the words of his chef Daniel Tejera, chef who has been part of Dani García's team at Leña 3 recent years and previously distinguished as Best Young Chef of the Canary Islands in the Gastro Canarias championship 2019, “In Troqué I try to pay tribute to traditional Spanish cuisine, using only traditional recipes to work them to their maximum expression using fresh and local ingredients”. We want our guests to recognize the flavors and preparations, admiring and enjoying our careful way of cooking them.. In summary, our proposal can be summarized by saying that it is like the kitchen of any Spanish house but with perhaps somewhat more complex techniques., impossible to develop in a domestic kitchen.

The Troqué room has been designed seeking to convey, with its minimalist and sophisticated atmosphere, a contemporary and welcoming atmosphere that perfectly translates the restaurant's gastronomic proposal: a harmonious and minimal fusion between classic and modern.

The restaurant also has a carefully selected wine cellar., directed by the expert sommelier Rodrigo Gonzalez, which includes about 200 references of the most emblematic wineries in Spain, offering the perfect accompaniment to each dish.

As Rodrigo González himself comments “We have considered designing the wine list, choosing, both well-known wines from the wide and excellent wine offer in Spain, like some jewelry “out of letter” of which there are often only one or two bottles in the Canary Islands. These options, imitating a bit the list of daily suggestions on the restaurant's food menu, are offered in a small note attached to the wine list, thus giving the opportunity, to those who want to explore a little beyond the menu, to taste very good wines, very special.
