Artificial Intelligence (IA) will be one of the central axes of the MFDreams program, addressed over three days from different key perspectives for the food sector. The first day will offer a futuristic vision, exploring how AI can disruptively transform the food chain. Emerging trends and technologies that will shape the future of food will be discussed.. The second day will focus on the application of AI in the design of food products, highlighting how these tools allow optimizing innovation processes, improve product quality and adapt to new market demands. And on Wednesday Madrid Fusión Dreams will delve into the impact of AI in the fields of nutrition and health, showing how these technologies contribute to improving allergen management, personalized menu planning, the interpretation of nutritional labels or the evaluation of food sustainability.
The general director of Fundación Alícia, Toni Massanés, defined the space of Dreams “as the most mestizo and transversal, because it tries to know what gastronomy can do if you mix all its knowledge with entrepreneurship, technology, science or art”, and advanced that it will have more than 60 speakers to address the applications of AI in gastronomy every day, in the design of new foods and in nutrition and health.
