The new proposal of the season offers two tasting menus in an exquisite ode to the great products of Lanzarote
With a spectacular culinary progression and an obsessive selection of the best products from the sea and land of Lanzarote, the chef Victor Valverde and the owners of Ico Palace, Sonsoles Lopez y Eduardo Riestra They have presented their new winter menu 2024, which is complemented by three extraordinary pairings created by the sommelier Ivan Monreal.
The new proposals of Ico Palace, offering two tasting menus (long and short) only at night (They also open on Sunday at noon), They are an exquisite hymn to the great products of Lanzarote, from the famous shrimps and the gigantic carabineros of The Holy, even local tuna and octopus, the magnificent tomatoes of Tinajo…
Based on the refined culinary style of Valverde, whose philosophy is based on absolute respect, almost minimalist, to the product and its characteristics, just adding fine subtlety and a lot of freshness under a contemporary look, The new long tasting menu proposes dishes such as salmon nigiri Uga with crispy rice (one of the house's greatest hits), the stracciatella de Gran Canaria with brioche and tomato, the tomato salmorejo Tinajo with goat cheese ice cream and seasonal fruit, the monumental tuna Lanzarote with lemon cane and dill, the prawns The Holy with boiled red mojo, the great carabinieri of The Holy to the spectacular natural of his body and head, the fish strictly of the day with mojo picón and green almond mojo, Canarian pork at low temperature with millet and demi-glace and the gofio mousse with salted caramel and meringue.
