Haydée brings Canarian flavor to a charity gala in Ibiza

Victor Suarez, Haydée chef in Tenerife, will be the only canary at the Stars Against Cancer gala, that will bring together 20 chefs Michelin in Ibiza

The Tenerife chef Victor Suarez, in front of Haydée, He will be the only Canarian chef who participates next 3 October in the fifth edition of Stars against cancer, a solidarity dinner that will bring together twenty Michelin Star chefs in Ibiza.

The meeting will take place in Nassau Beach Club and will allocate the entire proceeds to ASPANOB, Association of Families of Minors with Cancer of the Balearic Islands. In last year's edition, the organization delivered to the entity 29.510 euros.

The initiative is promoted by chef Óscar Molina, from the Gaia restaurant, with Nuria Moreno.

A Haydée dish on the menu

Suárez will bring to the menu a fermented tomato with king crab, one of the preparations that will be integrated into a dinner created between the twenty participating chefs.

Among the announced dishes are also lemon fish with fried pepper pickle and trout from Israel Ramos.; white shrimp gazpacho from Calpe, trout yolk and roe by Rafa Soler; smoked trout with labneh by Álvaro Garrido; Samuel Naveira's sea bass mosaic or Raúl Resino's cold-pickled swordfish.

Together with Víctor Suárez they will participate, among others, Oscar Molina, Carlos Maldonado, Victor Martin, Lydia del Olmo, Alvaro Garrido, Raul Resino, Marc Segarra, Luis Valls, Pablo González Conejero, Rafa Soler and Aarón Ortiz.

From Tenerife to Ibiza

Víctor Suárez currently directs Haydee, located in the Gran Tacande Hotel in Costa Adeje, in addition to Chicha Morada, in Puerto de la Cruz.

The chef developed part of his professional career in restaurants linked to Ferran Adrià and Martín Berasategui and has stayed in houses such as Azurmendi or Nerua. Haydée has a Michelin Star and a Repsol Sun.

Its participation in Ibiza thus incorporates Canarian representation to a call in which haute cuisine works, on this occasion, as a fundraising tool for families of minors with cancer.
