The only dish, by Fran Belín
Carabineros marine rice, of Keys 1973
Playa de las Américas · Arona · Tenerife
I recently visited the Taste restaurant 1973 (Hotel Villa Cortes, Aaron). Head chef Diego Laureano Schattenhofer's updated tasting menu leaves no room for doubt: exhibits an irrefutable culinary brilliance between renewed proposals and the already iconic ones, that are the imprint of the House.
Terroirs and gastronomic symbols of the Canary Islands that the chef has worked hard to show after trials and more trials executed with millimetric rigor..
This time it is very difficult to select “The Only Plate” for platocanario.es, but I'm going to opt - you know: a plate, a glass of wine, a coffee—for the marine rice of carabineros. Little more would have to be added about this seafood specialty to what I have written on other occasions and consider that the clarity of the stew - and the technique that is sensed - is reliable from the first spoonful.. This pass is – it would be said without grandiloquence – an irreplaceable proposal, “edible heritage” in all aspects: flavor, texture, cooking point and presentation.
Here I would like to emphasize that what Schattenhofer and his team do is incredible.: every time I try a dish, the next time it is noticeably better. Incredible!
Data to take into account
Hotel Villa Cortes
38650 Playa de las Américas, Aaron.
I also tried…
The tasting menu is wonderful: initial aperitif consisting of razor clam water and oyster; Fat tuna; volcanic coral; bivalves; enzymatic sea bass and marine cocktail.
They are followed by shrimp; «My lady, nice dad (mimetic)»; black; El Hierro tablet; palm cow; papaya and mango; strawberry, tomato and roses, and little crazy things (chocolates).
Pairing note
a glass of champagne
The gastronomic restaurant of the Hotel Villa Cortés is distinguished by the care in the selection of wines and the harmonies suggested by Aníbal or Alberto.
Perfect for the sweetness of the rice, a glass of champagne, but, ojo, in a glass of appropriate size—for white wine—. The bubbles go wonderfully with the formidable crustacean and the connection of the grain and its marine elements.
