Chef Ferruz joins Víctor Suárez at Haydée for a menu of 17 passes that mix Mediterranean and Atlantic in an exclusive lunch 29 March

The Alicante chef Alberto Ferruz, with two Michelin Stars in BonAmb, will be the special guest of Victor Suarez to star in an exclusive gastronomic jam session in Haydée by Víctor Suárez.

The meeting, baptized as “Alicante-Tenerife Connection”, will bring together both chefs in a unique lunch 17 passports that will combine the character of the Mediterranean with the flavors of the Atlantic. The appointment will take place Sunday 29 March from 13.30 hours in the Tenerife restaurant.

Ferruz suma three Michelin Stars in total —two in BonAmb and one in Pepa House— in addition to five Repsol Suns, which places him among the most influential chefs on the Valencian gastronomic scene.. Its cuisine is based on the traditions of the Marina Alta—salted, fermented, pickles or meads—to reinterpret them from a contemporary creativity that is difficult to classify.

In this special culinary session, Ferruz will bring some of its most representative creations to Tenerife, as marine lean, tigernut garlic, pickled white vegetables and Santa Pola shrimp filtered in chop butter, Mediterranean bolognese, fish, ashes and salt and with vegetable heaven bacon.

For your part, Suárez will respond with some of the most emblematic dishes of Haydee, references of the new Canarian cuisine, between them the liquid garlic omelette, rabbit tartlet in salmorejo, goat stew arepita, the squid salpicón, the brunette with watercress and scalded millet o the black cherne in boiled mojo.

The menu, structured in several phases —The Beginning, The Identity, The Experience and Sweet Moment—will culminate with elaborations such as banana, Garajonay, small pastries and vegetable bacon. The price of lunch will be 198 euros without drinks, with reservations available between 13.30 and the 15.00 hours.

For just one day, Mediterranean and Atlantic cuisine will meet in Tenerife in a proposal that promises to be one of the most unique gastronomic events of the month in the Canary Islands.
