Harmonious flavors turned Haría into an intimate dialogue between local gastronomy and baroque music, in an evening where the territory was heard and savored
| There are events that are announced and others that, simply, they present themselves. Harmonious flavors belonged to this second category. It is no coincidence that the capacity was filled just two hours after being made public.: in I would do, when local gastronomy, ancient music and attention to detail go hand in hand, expectation quickly transforms into certainty.

The evening started with Sonino by Giovanni Girolamo Kapsberger and From the eastern gates by Giulio Caccini, performed by Liana Llauger -with a German theorbo made by the local luthier Paco Dorta– and the soprano Laura Kmetic. From the first chord it was clear that this was not a simple musical accompaniment.. The interpretation—sober, precise and deeply expressive—marked the emotional tempo of the experience.
The first course was a declaration of intent: Eggs from chickens raised in the wild in the lands of Tabayesco, stuffed on a delicate bed of La Santa prawns. Recognizable product, treated with respect and sensitivity, paired with a dry white The Crack that provided freshness and territory. honest cooking, without artifice, signed by the restaurant team Tacande —Michelin and Repsol recommended—under the direction of Victor Betancort and his head chef Javier Hernandez.
Con That disdainful look by Claudio Monteverdi came one of the most identifying moments of the night: Mama Trina's pompano in boiled mojo, accompanied by Guinate revolcona sweet potato. A dish that spoke from memory, of oral transmission and domestic cooking elevated to gastronomic discourse without losing its essence.
The music of Barbara Strozzi (What can be done) gave way to a Tabayesco chicken broth, deep, comforting, almost meditative. The pairing with a red wine Celso Wineries reinforced the feeling of roots, of well-understood identity.
The tone became introspective with Go crystal tears the John Dowland, while a Pinchito of black pork raised in Órzola was served, accompanied by Evaristo's potato. A precise bite, tasty, without fanfare, which confirmed the coherence of the entire proposal.

Measured sweetness, delicate texture and a closure that appealed directly to emotion. The last pieces —My aurilla, Here my sighs of Kapsberger and O beautiful hair by Francesca Caccini—sealed a night that was lived with listening and calm.
Special mention deserves the service, impeccable and close, by young people from the town itself, that brought naturalness and local pride to an evening already full of meaning. All this under the organization of the Aceró Cultural Association Ancient Music of Lanzarote y Rita Mendez, from the Rial Production Company, with the aforementioned collaboration of Paco Dorta Luthier, he Haría Town Hall and the Lanzarote Town Council.
Harmonious flavors It was not just a gastronomic-musical event. We are witnessing an affirmation of identity.
