Organized by Tenerife in collaboration with Madrid Fusión, The final of the V edition of the National Cooking Contest with Mojos will be held on 29 January

The mojo, the most iconic and international sauce Tenerife and of Canary Islands, is the center of this Cooking Contest that wants to show and make known the rich, chromatic and versatile world of mojos in Spain.

With this objective, to which is added the harmonization with the extraordinary Tenerife wines, Tenerife and Madrid Fusion propose a culinary challenge to demonstrate not only the traditional and contemporary value of mojos, but also the infinite possibilities of this sauce with all types of raw materials.

Originated at the end of the 16th century, the mojos of Tenerife son, today, both the traditional “verde”, “rojo” o “picón”, as the most complex and evolved, one of the most powerful and creative sauces in Spain, admitting freedom and imagination within some basic ingredients, fruit of its same origin, crossroads of civilizations and emotions.

Besides, the wines of the six Denominations of Origin (DO y DOP) that are made in Tenerife They harmonize with dishes with mojos in a natural and organic enhancing way..

The six selected finalists will present their recipes live during the celebration of one of the workshops. Madrid Fusion 2025, next wednesday 29 January.

The evaluation will be carried out by a jury made up of specialized journalists and prestigious chefs., as well as gastronomic and food sector specialists. The two winners of the contest will be announced later.: al Best Mojo y al Best Dish with Mojo paired with Tenerife wine.

The authors of the winning recipes will receive a prize of €800 in each of the two categories.
