La Trattoria launches menu signed by Andrea Bernardi, Nub chef, with Italian classics reinterpreted from tradition and product

Bahía del Duque opens a new stage for one of its most recognizable gastronomic spaces. La Trattoria x Andrea Bernardi presents a renewed menu under the gaze of the Roman chef, co-owner of Nub, distinguished restaurant with a Michelin star and two Repsol Suns. The result is a proposal that returns to Italian cuisine from the most fertile territory: memory, the product and the well-measured emotion.

The new menu does not seek to disguise the classics, but tune them. Bernardi part of the Italian tradition, of that recipe book that is recognized before even reaching the table, and leads him towards a more personal language, contemporary and precise. There is respect for the origin, but also a clear desire to update, to take the trattoria to a more gastronomic space without losing warmth or popular sense.

Born in Rome and raised in Genzano, in the heart of Lazio, Andrea Bernardi has built a good part of her culinary identity from that intimate relationship with family recipes and the product.. After touring Austria, Germany and Spain, settled in the Canary Islands in 2005, where he has developed a decisive career. He was recognized as Best Chef in the Canary Islands and Best Chef in Spain in 2010, and since 2018 maintains Nub's Michelin star, project that he shares in Bahía del Duque with chef Fernanda Fuentes-Cárdenas.

Now, That sensitivity is transferred to La Trattoria with a menu that claims a recognizable Italy, warm and artisanal. Among the new additions, the Bernardi style veal with tuna sauce, made with thin slices of beef cooked at low temperature and marinated tuna, accompanied by tonnata foam, boiled egg and fried capers. A classic root dish that, in this version, gain lightness, technique and depth.

The tour continues with essential elaborations of the Italian imaginary, like him Carpaccio à la Giuseppe Cipriani, the Bruschetta alla Norma or a new reading of the Eggplant parmesan. Along with them, dishes appear that expand the register of the menu., like the Burrata fritta with tomato jam, the Smoked stracciatella with tomato tartare and mustard or the Salmon carpaccio marinated with citrus.

The sweet chapter preserves that same line of revised tradition. The Pistachio panna cotta, he Baba with macerated fruit, the Millefeuille tiramisu or the Chocolate cake They make up a closing that looks at Italian pastries with a clear vocation: finish the experience from pleasure, not from artifice.

Under the direction of Bernardi, La Trattoria reinforces its identity as one of the references of Italian cuisine in the Canary Islands. The proposal finds its balance between Mediterranean hospitality, carefully selected product and artisanal cuisine that does not give up technical detail.

With this renewal, Bahía del Duque adds a new chapter to its gastronomic commitment. La Trattoria x Andrea Bernardi invites you to travel through an authentic Italy, elegant and emotional, in an environment that evokes the essence of Tuscany without leaving Tenerife.
