Kevin Diaz (Lucita House, Muriedas) won the victory in the tenth edition of the “Nacho Basurto” Makro Torrelavega Chefs Contest 2025
The Canarian chef living in Cantabria, Kevin Diaz, head chef of Lucita House (Muriedas, Camargo), has been proclaimed Best Chef in Cantabria 2025 after winning the tenth edition of the “Nacho Basurto” Makro Torrelavega Chefs Contest, contest organized by the Association of Cooks of Cantabria and FACYRE (Federation of Cooks and Pastry Chefs of Spain).
The contest required the preparation of two dishes with predetermined proteins: chicken and lemon fish. Five finalists reached the last round and presented their proposals to the jury.
Kevin Diaz I forgive articulated his proposal in two distinct sequences. The first, titled Between the chicken and the egg, It was an interpretation of chicken in various textures. It started with a toasted millet cream with poached egg and aerated millet foam., which was followed by a chicken stew with its skins, crumbled and wrapped in film to gain unctuousness, fried in Cornstarch and accompanied by an intense demi-glace. The dish was completed with a celeriac puree with earthy and elegant nuances., a fried chicken broth and a creamy chicken and blood sausage croquette that closed the common thread.
In the second sequence, dedicated to lemon fish, the fish was marinated in miso and mirin, reduced to a deep sauce and finished on the grill. As a garnish, a mashed sweet potato with ginger, that evoked a nod to his Canarian roots, and a fresh mango and cucumber tartar that provided balance and lightness to the whole.

"For me, winning this contest has been an ode to effort. Last year I came second and I didn't stop trying. Today I am proud to demonstrate that with perseverance, “With work and sacrifice, the objectives are achieved”, said Kevin Díaz after receiving the award.
The chef stressed that this victory represents a personal and professional boost: “Going to the national championship is a dream that I have had for seven years., when I started in the kitchens, I couldn't even imagine. This recognition motivates me to continue learning, working and creating dishes that make a difference”.
As winner of the contest, Kevin Díaz will represent Cantabria in the FACYRE National Chef Competition, an event that brings together the best emerging talents in the country and that has become a reference showcase for Spanish haute cuisine. Natural of Fuerteventura, Kevin began his career in Cantabria in El Baruco de Anero, until recently assuming the head of kitchen at Casa Lucita (Muriedas, Camargo).
