Ivan Monreal, born in Las Palmas de Gran Canaria in 1982, He is one of the most prominent sommeliers in Spain. Trained at the Associazione Italiana Sommelier and at the Spanish Tasting School, He complemented his learning in wineries in Spain and Germany. His professional career includes experience in Michelin-starred restaurants such as Tristán (Mallorca), Olive (Stuttgart) and Amador (Mannheim). At the moment, leads the sommelier at the Palacio Ico gastronomic hotel in Teguise, Lanzarote, where he has developed an innovative and creative wine list. In 2024, was recognized as the only canary in the Top 50 from the top list 100 Sommeliers from Spain, reaching the number position 11. Besides, has obtained the certificate from the Court of Master Sommeliers, positioning itself among the world elite of sommelier.
