Abraham Rodriguez, of Volcano Teide, winner of the 11th Canary Islands Signature Canary Sandwich Championship

The Canarian sandwich once again claimed its place as a gastronomic proposal with its own identity in Gastrocanarias 2026. Abraham Rodriguez, of Volcano Teide Cafe, was proclaimed winner of 11º Canarian Signature Canarian Snacks Championship Grand Prix Fred Olsen Express, held on the Tenerife Cabildo Stage.

The contest was responsible for opening the activity on the second day of the XI Gastronomic Fair of the Canary Islands, consolidated as one of the major professional events in the sector in the Archipelago. In this edition, The contest once again put the focus on creativity applied to bread, Canarian flavors and the use of ingredients linked to the territory.

Abraham Rodríguez's winning proposal featured the Pelibuey lamb, made with a technique of muddy, traditional from La Gomera. An election that connected local products, popular recipes and contemporary look, three keys increasingly present in signature Canarian cuisine.

They completed the podium Claudio Guadalupe Suarez, second place, y David Mendez Diaz, third place. They also participated as finalists Jobany Dorta Ravelo y Sergio Rodríguez Gutiérrez, in a competition that required presenting four units of the chosen sandwich in a maximum time of 30 minutes.

The jury evaluated five aspects included in the championship rules: organization, technique, recipe, presentation and tasting. These criteria allowed us to evaluate not only the final flavor, but also the execution, cleaning work, the coherence of the proposal and its ability to function as a complete gastronomic elaboration.

The Canary Islands Championship of Signature Canarian Sandwiches seeks to promote the qualitative improvement of the offer in bars, cafes and catering establishments, proving that the sandwich can go far beyond quick preparation. In GastroCanarias, once again showed itself as a versatile format, popular and with real possibilities to express the culinary identity of the Islands.
