| Canary Islands acude a Madrid Fusion 2026 with an ambitious presence, diverse and representative of its entire gastronomic territory, reaffirming its role as one of the country's great culinary destinations. The islands arrive at the congress without complexes, combining large-format proposals with more intimate ones, in a choral story that goes from exuberance to essence.

Tenerife, official co-sponsor of the event, will lead this deployment with the greatest presence of Canary Islands in the history of the congress and a stand of 400 square meters that will function as a showcase of gastronomic potential, creative and productive of the island. next to her, Gran Canaria will consolidate its position as one of the most dynamic territories on the national culinary scene, while Fuerteventura y Lanzarote will reinforce your identity through the product, the territory and the uniqueness of its cuisines.

This deployment will take place within the framework of Madrid Fusión Dreams #SpainFoodTechNation, which celebrates its third edition of the 26 al 28 January with a transversal look at the future of food. The space will once again connect gastronomy, science, health, innovation, sustainability and culture, bringing together more than 60 participants among chefs, scientists, businesspeople, researchers and communicators of national and international reference.

The program will address some of the big questions already straining the food system: what will we eat tomorrow, Who decides what reaches our plate and what role does food play in the great contemporary challenges?. From the biological and cultural origin of food to changes in consumption habits, power in the food chain, the restoration transformation, the influence on young people or the customer experience, Dreams will display a broad and critical journey through the challenges of the sector.

The relationship between cooking, science and health, nutrition applied to sports, innovation and its risks—such as misinformation or the phenomenon of fake food—, alternative proteins, sustainability, Climate change or the dialogue between tradition and creativity will also play a central role.. The program will be completed with scientific reflections on the origin of food, genetics and the importance of continuing to ask questions to build the gastronomy of the future.
